Salad Recipes - Swiss Chef's Salad

Ingredients

  • 175 g/6 oz/1 1/2 cups penne

  • 225 g/8 oz cooked ham, cut into thin strips

  • 50 g/2 oz/1 cup button mushrooms, sliced

  • 3 cherry tomatoes, quartered

  • 100 g/4 oz young spinach leaves, torn in pieces

  • 15 ml/1 tbsp chopped marjoram

  • 45 ml/3 tbsp olive oil

  • 15 ml/1 tbsp red wine vinegar

  • Salt and freshly ground black pepper

  • 100 g/4 oz Gruyere (Swiss) cheese, cut into thin strips

  • 3 hard-boiled (hard-cooked) eggs, quartered


Method:

  1. Cook the penne according to the packet directions. Drain, rinse with cold water and drain again.

  2. Place in a bowl and add all the ingredients except the cheese and eggs, seasoning well with salt and pepper.

  3. Toss gently but thoroughly, pile into bowls and top with the cheese strips. Arrange the eggs around the edge.
