Recipes - Turkey Temptation
Ingredients

225 g/8 oz/2 cups
rotelli
-
225 g/8 oz/2 cups
cooked turkey, diced
-
2 celery sticks,
chopped
-
1 green (bell) pepper,
diced
-
1/2 small onion, sliced
and separated into rings
-
1 large carrot, grated
-
200 g/7 oz/1 small can sweet corn (corn), drained
-
30 ml/2 tbsp olive oil
-
Lemon juice
-
Salt and freshly
ground black pepper
-
Lettuce leaves
-
45 ml/3 tbsp
mayonnaise
-
15 ml/1 tbsp cranberry
sauce
-
Chopped parsley
Method:
-
Cook the pasta according to the packet directions.
Drain, rinse with cold water and drain again.

Place
in a bowl with the turkey, celery, pepper, onion,
carrot and sweet corn.

Toss in the olive oil and
lemon juice to taste. Season well. Pile on to
lettuce leaves on individual plates.

Mix the
mayonnaise with the cranberry and spike with lemon
juice to taste. Season with a little salt and lots
of pepper.

Put a spoonful of the dressing on top of
each salad and serve garnished with parsley.
