Ingredients
-
175 g/6 oz/3/4 cup
long-grain rice
-
2 oranges, peeled, sliced and cut into quarters
-
1 onion,
sliced and separated into rings
-
200 g/7 oz/1 small can
pimientos, drained and cut into
thin strips
-
12 stuffed green
olives, sliced
-
100 g/4 oz/1 cup
chorizo sausage, thinly sliced
-
60 ml/4 tbsp olive oil
-
1 garlic clove,
crushed
-
15 ml/1 tbsp chopped
parsley
-
15 ml/1 tbsp white
wine vinegar
-
5 ml/1 tsp clear honey
-
Salt and freshly
ground black pepper

Lettuce leaves
Method:
-
Cook
the rice in plenty of boiling salted
water until just tender. Drain, rinse with cold
water and drain again.

Place in a bowl with the
oranges, onion, pimientos, half the olives and the
chorizo.
-
Blend the oil with the garlic, parsley,
vinegar, honey and a little salt and pepper. Pour
over the salad and toss well.

Pile on to a bed of
lettuce and scatter the remaining sliced olives
pepper before serving.
