Salad Recipes - Warm Carrot, Courgette and Wild Rice Salad

Ingredients

  • 100 g/4 oz/1/2 cup wild rice or wild rice mix

  • 225 g/8 oz/2 cups grated carrots

  • 225 g/8 oz/2 cups grated courgettes (zucchini)

  • 90 ml/6 tbsp sunflower oil

  • 30 ml/2 tbsp mustard seeds

  • 30 ml/2 tbsp lemon juice


Method:

  1. Cook the wild rice according to the packet directions. Drain, rinse with cold water and drain again.

  2. Place in a bowl and add the carrots and courgettes. Heat the oil in a frying pan (skillet).

  3. Add the mustard seeds and fry (sauté) quickly until they begin to pop.

  4. Stir in the lemon juice, pour over the salad, toss quickly and serve straight away.
