Warm Carrot, Courgette and Wild Rice Salad
Ingredients

100 g/4 oz/1/2 cup wild rice or wild rice mix
-
225 g/8 oz/2
cups grated carrots
-
225 g/8 oz/2 cups grated courgettes (zucchini)
-
90 ml/6 tbsp sunflower
oil
-
30 ml/2 tbsp mustard
seeds
-
30 ml/2 tbsp lemon
juice
Method:
-
Cook the wild rice according to the packet directions. Drain, rinse with
cold water and drain again.

Place in a bowl and add
the carrots and courgettes. Heat the oil in a
frying pan (skillet).

Add the mustard seeds and fry
(sauté) quickly until they begin to pop.
-
Stir in the
lemon juice, pour over the salad, toss quickly and
serve straight away.
