Salad Recipes - Warm Crunchy Fried Bread and Herb Salad

Ingredients

  • 225 g/8 oz/2 cups spiralli

  • 225 g/8 oz/4 cups fresh whole meal breadcrumbs

  • 12 cherry tomatoes, chopped

  • 15 ml/1 tbsp chopped thyme

  • 15 ml/1 tbsp chopped basil

  • 15 ml/1 tbsp chopped parsley

  • Salt and freshly ground black pepper

  • 120 ml/1/2 cup olive oil

  • 3 garlic cloves, crushed

  • Freshly grated Parmesan cheese


Method:

  1. Cook the pasta according to the packet directions. Drain, rinse with boiling water and drain in a colander while preparing the salad.

  2. Dry-fry the breadcrumbs in a large frying pan (skillet), tossing all the time, until crisp but not burnt.

  3. Mix the tomatoes, herbs, a little salt and lots of pepper in a bowl.

  4. Heat the oil in a frying pan, add the breadcrumbs and garlic and fry (sauté) until golden brown.

  5. Add to the bowl and toss well. Add to the warm spiralli, toss quickly and serve straight away with Parmesan cheese.
