Salad Recipes - Warm Mexican Salsa Salad

Ingredients

  • 2 garlic cloves

  • 1 small red onion, quartered

  • 450 g/1lb ripe tomatoes

  • 25 g/1 oz/1/4 cup pickled chilies

  • 5 ml/1 tsp dried oregano

  • 50 g/2 oz/1/2 cup chopped coriander (cilantro) leaves

  • 2.5 ml/1/2 tsp salt

  • Freshly ground black pepper

  • 60 ml/4 tbsp olive oil

  • 225 g/8 oz spaghetti

  • Tortilla chips

  • Freshly grated Parmesan cheese


Method:

  1. Place the garlic and onion in a food processor and chop briefly.

  2. Add the tomatoes and chilies and chop fairly finely but still with lots of texture.

  3. Turn the mixture into a sieve (strainer) over a bowl and allow to drain for 5 minutes.

  4. Pour away the liquid, add the tomato mixture then stir in the herbs, salt, pepper and oil.

  5. Meanwhile, cook the spaghetti according to the packet directions. Drain, add to the salsa and toss well.

  6. Pile on to serving plates, surround with tortilla chips and sprinkle with grated Parmesan.
