Soups Recipes - Golden Peasant Soup

Ingredients

  • 1 onion, finely chopped

  • 1 garlic clove, crushed

  • 25 g/1 oz/2 tbsp butter

  • 1 large potato, finely diced

  • 2 celery sticks, finely chopped

  • 1 yellow (bell) pepper, finely diced

  • 1 large carrot, finely diced

  • 1.5litres/2 1/2 pts/6 cups beef stock

  • 2.5 ml/1/2 tsp turmeric

  • 50 g/2 oz/1/2 cup lumachi or other small pasta shapes

  • 430 g/15 oz/1 large can chick peas (garbanzos), drained

  • 100 g/4 oz streaky bacon rashers (slices), finely diced

  • Salt and freshly ground black  pepper

  • Grated Cheddar cheese


Method:

  1. Fry (sauté) the onion and garlic in the butter for 2 minutes until softened but not browned.

  2. Add the remaining prepared vegetables and fry, stirring for 1 minute.

  3. Add the stock, turmeric and pasta. Bring to the boil and simmer for 10 minutes.

  4. Stir in the chick peas and bacon and simmer for a further 10 minutes.

  5. Season to taste and serve the Cheddar cheese separately for sprinkling over.
