Ingredients

1 onion, finely chopped
-
1 garlic clove,
crushed
-
25 g/1 oz/2 tbsp
butter
-
1 large potato, finely
diced
-
2 celery sticks,
finely chopped
-
1 yellow (bell)
pepper, finely diced
-
1 large carrot, finely diced
-
1.5litres/2 1/2 pts/6 cups beef stock
-
2.5 ml/1/2 tsp
turmeric
-
50 g/2 oz/1/2 cup lumachi or other small pasta shapes
-
430 g/15 oz/1 large can
chick peas (garbanzos), drained
-
100 g/4 oz streaky
bacon rashers (slices), finely diced
-
Salt and freshly
ground black pepper

Grated Cheddar cheese
Method:
-
Fry (sauté) the onion
and garlic in the butter for 2 minutes until
softened but not browned.
-
Add the remaining prepared
vegetables and fry, stirring for 1 minute.

Add the
stock, turmeric and pasta. Bring to the boil and
simmer for 10 minutes.

Stir in the chick peas and
bacon and simmer for a further 10 minutes.

Season
to taste and serve the Cheddar cheese separately for
sprinkling over.
