Recipes - Hortosouppa (Cyprus Vegetable Soup)
Ingredients

350 g/12 oz carrots,
chopped
-
2 courgettes
(zucchini), chopped
-
2 potatoes, diced
-
2 celery sticks,
chopped
-
1 bay leaf
-
1.2 liters/2 pts/5
cups chicken or vegetable stock
-
Salt and freshly
ground black pepper
-
1 piece cinnamon stick
-
15 ml/1 tbsp tomato
puree (paste)
-
50 g/2 oz/1/4 cup long-grain rice
-
15 ml/1
tbsp olive oil
-
15 ml/1 tbsp lemon
juice
Method:
-
Put all the prepared vegetables in a pan with the
bay leaf, stock, a little salt and pepper and the
cinnamon stick.

Bring to the boil, reduce the heat,
cover and simmer for 10 minutes.

Add the tomato
puree and rice and simmer for a further 10-15
minutes or until the rice and vegetables are really
tender.

Remove the bay leaf and cinnamon stick.
Taste and add olive oil, lemon juice and a little
more salt and pepper to taste.
