Soups Recipes - Hot and Sour Soup with Rice

Ingredients

  • 225 g/8 oz/4 cups button mushrooms, sliced

  • 30 ml/2 tbsp soy sauce

  • 10 ml/2 tsp chopped coriander  (cilantro)

  • 1 bunch of spring onions (scallions), chopped

  • 100 g/4 oz/1 cup baby sweet-corn (corn), thinly sliced

  • 75 ml/5 tbsp white wine vinegar

  • Salt and freshly ground black  pepper

  • 1.2 liters/2 pts/5 cups chicken stock

  • 175 g/6 oz/1 1/2 cups cooked chicken or turkey, shredded

  • 50 g/2 oz/1/2 cup cooked long-grain rice


Method:

  1. Place all the ingredients except the chicken or turkey and rice in a saucepan. Bring to the boil and simmer for 10 minutes.

  2. Add the meat and rice and simmer for a further 5 minutes. Serve hot.
