Soups Recipes - Italian Rice and Spinach Soup

Ingredients

  • 275 g/10 oz/1 carton frozen chopped spinach, thawed

  • 1.2 liters/2 pts/5 cups chicken or vegetable stock

  • 15 g/1 tbsp unsalted (sweet) butter

  • 100 g/4 oz/1/2 cup arborio or other risotto rice

  • Salt and freshly ground black pepper

  • Freshly grated Parmesan cheese


Method:

  1. Place the spinach in a pan with the stock and butter. Bring to the boil.

  2. Add the rice, reduce the heat and simmer for 15-20 minutes until the rice is just tender.

  3. Season to taste, ladle into soup bowls and serve with the Parmesan cheese.
