Recipes - Macaroni Cheese and Celery Soup
Ingredients

1 large potato, finely
diced
-
1 large onion, finely
chopped

1 large carrot, finely
diced

2 celery sticks, finely
chopped
-
600 ml/1 pt/2 1/2 cups
chicken stock
-
50 g/2 oz/1/2 cup short-cut macaroni
-
100
g/4 oz Cheddar cheese, grated
-
150 ml/2/3 cup single
(light) cream
-
Salt and freshly
ground
white
pepper
-
A little milk
-
Chopped celery leaves
Method:
-
Put all the prepared
vegetables in a pan with the stock and macaroni.

Bring to the boil, reduce the heat, part-cover and
simmer for 20 minutes. Stir in the cheese and
cream.

Season to taste and thin, if liked, with a
little milk. Heat through but do not boil.

Ladle
into warm soup bowls and garnish with a few chopped
celery leaves.
