Soups Recipes - Macaroni Cheese and Celery Soup

Ingredients

  • 1 large potato, finely diced

  • 1 large onion, finely chopped

  • 1 large carrot, finely diced

  • 2 celery sticks, finely chopped

  • 600 ml/1 pt/2 1/2 cups chicken stock

  • 50 g/2 oz/1/2 cup short-cut macaroni

  • 100 g/4 oz Cheddar cheese, grated

  • 150 ml/2/3 cup single (light) cream

  • Salt and freshly ground white pepper

  • A little milk

  • Chopped celery leaves


Method:

  1. Put all the prepared vegetables in a pan with the stock and macaroni.

  2. Bring to the boil, reduce the heat, part-cover and simmer for 20 minutes. Stir in the cheese and cream.

  3. Season to taste and thin, if liked, with a little milk. Heat through but do not boil.

  4. Ladle into warm soup bowls and garnish with a few chopped celery leaves.
