Soups Recipes - Oriental Pork and Noodle Soup

Ingredients

  • 100 g/4 oz pork fillet, cut into small, very thin strips

  • 5 ml/1 tsp corn flour (cornstarch)

  • 2.5 ml/1/2 tsp ground ginger

  • 30 ml/2 tbsp soy sauce

  • 15 ml/1 tbsp sesame oil

  • 225 g/8 oz carrots, thinly sliced

  • 2 spring onions (scallions), sliced

  • 1.2 liters/2 pts/5 cups chicken stock

  • 50 g/2 oz/1/2 slab Chinese egg noodles

  • Salt and freshly ground black  pepper


Method:

  1. Toss the pork in the corn flour and ginger. Sprinkle with the soy sauce and sesame oil and toss. Leave to marinate for 15 minutes.

  2. Meanwhile, cook the carrots and spring onions in the stock for 5 minutes.

  3. Add the pork with its marinade and the noodles and simmer for 10 minutes, stirring occasionally. Season to taste and serve hot.
