Soups Recipes - Pancit Molo (Wontons in Garlic Soup)

Ingredients

  • 50g/1/2 cup peeled prawns (shrimp), chopped

  • 50g/1/2 cup minced pork

  • 50g/1/2 cup chicken, chopped

  • 5ml/1 tsp soy sauce

  • 1 bunch of spring onions (scallions), chopped

  • 1/2 garlic bulb, crushed

  • salt

  • 100g/4oz/1 cup plain (all-purpose) flour, sifted

  • 2 eggs, beaten

  • 15ml/1 tbsp corn oil

  • 1 onion, finely chopped

  • 1.75 liters/7 1/2 cups chicken stock


Method:

  1. Mix the prawns with the pork, chicken, soy sauce, half the spring onions, 1 of the garlic cloves and a pinch of salt. Put the flour lic cloves and a pinch of salt.

  2. Add a little cold water if necessary to form a soft but not sticky dough. Knead gently on a lightly floured surface and roll out thinly.

  3. Cut into 7.5cm/3 in triangles. Divide half the prawn and meat mixture among the triangles. Dampen the edges with water. Fold in the two side points and roll up.

  4. Heat the oil in a large saucepan or wok. Fry the remaining garlic and the chopped onion until lightly golden. Add the remaining filling and fry, stirring, for 3 minutes.

  5. Add the chicken stock and season to taste with salt. Bring to the boil, drop in the dumplings, cover and simmer for about 15 minutes.

  6. Sprinkle the remaining spring onion into the pot just before serving in warm soup bowls.
