Soups Recipes - Quick Tomato and Lentil Soup with Spaghetti

Ingredients

  • 50g/1 cup cooked chopped spaghetti

  • 425g/15 oz/1 large can lentil soup

  • 300ml/1 1/4 cups passata (sieved tomatoes)

  • 30ml/2 tbsp medium dry sherry

  • 120ml/1/2 cup single (light) cream

  • Snipped chives


Method:

  1. Mix all the ingredients except the cream and chives in a saucepan.

  2. Heat through, stirring. Ladle into warm soup bowls and garnish each with a large swirl of cream and some snipped chives.
