Recipes - Rice Soup with Asparagus
Ingredients

1.5 liters/2 1/2 pts/6
cups chicken stock
-
15g/1/2 oz/1 tbsp
unsalted (sweet) butter
-
175 g/6 oz/3/4 cup arborio or other risotto rice
-
8 asparagus spears,
trimmed and chopped
-
Salt
Method:
-
Bring the stock and butter to the boil in a large saucepan.

Add the rice
and asparagus,
reduce the heat and simmer over a moderate heat for
15-20 minutes or until the rice is just cooked but
still has texture.
-
Season with salt, if necessary,
and serve straight away.
