Soups Recipes - Rice Soup with Asparagus

Ingredients

  • 1.5 liters/2 1/2 pts/6 cups chicken stock

  • 15g/1/2 oz/1 tbsp unsalted (sweet) butter

  • 175 g/6 oz/3/4 cup arborio or other risotto rice

  • 8 asparagus spears, trimmed and chopped

  • Salt


Method:

  1. Bring the stock and butter to the boil in a large saucepan.

  2. Add the rice and asparagus, reduce the heat and simmer over a moderate heat for 15-20 minutes or until the rice is just cooked but still has texture.

  3. Season with salt, if necessary, and serve straight away.
