Soups Recipes - Sweet-corn and Pasta Soup
Ingredients
2 rashers (slices) bacon
50 g/2 oz/1/2 cup conchiglietti or other soup pasta
600 ml/1 pt/2 1/2 cups milk
475 g/1lb 1 oz/1large can creamed sweet-corn (corn)
75 g/3 oz/1/3 cup curd (smooth cottage) cheese
2.5 ml/1/2 tsp grated nutmeg
Salt and freshly ground black pepper
Chopped parsley
Method:
Grill (broil) or dry-fry (sauté) the bacon until crisp then chop or crumble into small pieces and reserve.
Simmer the pasta in the milk for about 5 minutes until tender. Stir in the remaining ingredients except the parsley and heat through.
Ladle into soup bowls and garnish with the bacon and parsley.
