Soups Recipes - Sweet-corn and Pasta Soup

Ingredients

  • 2 rashers (slices) bacon

  • 50 g/2 oz/1/2 cup conchiglietti or other soup pasta

  • 600 ml/1 pt/2 1/2 cups milk

  • 475 g/1lb 1 oz/1large can creamed sweet-corn (corn)

  • 75 g/3 oz/1/3 cup curd (smooth cottage) cheese

  • 2.5 ml/1/2 tsp grated nutmeg

  • Salt and freshly ground black pepper

  • Chopped parsley


Method:

  1. Grill (broil) or dry-fry (sauté) the bacon until crisp then chop or crumble into small pieces and reserve.

  2. Simmer the pasta in the milk for about 5 minutes until tender. Stir in the remaining ingredients except the parsley and heat through.

  3. Ladle into soup bowls and garnish with the bacon and parsley.
