Soups Recipes - Tomato and Basil Soup

Ingredients

  • 3 beef tomatoes, skinned and chopped

  • 1.2 liters/2 pts/5 cups chicken stock

  • 10 ml/2 tsp tomato puree (paste)

  • 15 g/1 tbsp unsalted (sweet) butter

  • 100 g/4 oz/1/2 cup arborio or other risotto rice

  • 4 basil leaves, chopped

  • Salt and freshly ground black pepper


Method:

  1. Put the tomatoes in a pan with the stock, tomato puree and butter. Bring to the boil.

  2. Add the rice, reduce the heat and simmer for 15-20 minutes until the rice is just tender but still has texture.

  3. Stir in the basil and season to taste. Serve straight away.
