Starters Recipes - All American Appetizer

Ingredients

  • 175 g/6 oz/3/4 cup long-grain rice

  • 2 canned pimientos, chopped

  • 2 green chilies, seeded and chopped

  • 3 eggs, beaten

  • 75 ml/5 tbsp milk

  • Salt and freshly ground black pepper

  • 50 g/2 oz Cheddar cheese, grated

  • 15 ml/1 tbsp snipped chives


Method:

  1. Cook the rice in plenty of boiling salted water for 15 minutes until tender. Drain and rinse with hot water. Drain again.

  2. Mix with the pimientos and chilies and spread in a greased 20 cm/8 in square, shallow baking tin (pan).

  3. Beat the eggs with the milk and a little salt and pepper. Pour over and sprinkle with the cheese. Top with the chives.

  4. Bake at 180°C/350°F/gas mark 4 for 35 minutes or until golden brown and set. Serve cut into small squares.
