Recipes - Crisp Fried Noodles

Method:

Make sure the pasta is
completely dry and that the strands are separate.

Heat the oil to 190°C/375°F or until a cube of
day-old bread browns in 30 seconds.

Deep-fry the
noodles in small batches in a wire basket until
crisp and golden brown. Drain on kitchen paper then
toss in the salt.

Arrange the olives, gherkins and
radishes in small piles or in little dishes on
individual serving plates or bowls.

Add a pile of
crispy noodles to each plate and eat with the
fingers.
Note: Other pasta shapes can
be deep fried. They also make a
good
garnish for
oriental dishes and soups.
