Recipes - Curried Conchiglie, Melon and Prawn Cocktail
Ingredients

100 g/4 oz/1 cup
conchiglie
-
150 ml/1/4 pt/2/3 cup
mayonnaise
-
45 ml/3 tbsp crème
fraiche
-
10 ml/2 tsp curry
paste
-
225 g/8 oz/2 cups
peeled prawns (shrimp)
-
1/2 honeydew melon,
diced or
scooped into balls
-
2 celery
sticks, sliced
-
Salt and freshly ground black pepper

Shredded
lettuce Lemon wedges
Method:
-
Cook
the pasta according to the packet
directions. Drain, rinse with cold water and drain
again.
-
Meanwhile, mix the mayonnaise with the crème
fraiche and curry paste.
-
Add the prawns, melon and
celery to the pasta and season with salt and pepper.
Spoon on to the lettuce in 6 wine goblets.
-
Spoon the
curry sauce over and serve garnished with a lemon
wedge on the side of each glass.
