Starters Recipes - Curried Conchiglie, Melon and Prawn Cocktail

Ingredients

  • 100 g/4 oz/1 cup conchiglie

  • 150 ml/1/4 pt/2/3 cup mayonnaise

  • 45 ml/3 tbsp crème fraiche

  • 10 ml/2 tsp curry paste

  • 225 g/8 oz/2 cups peeled prawns (shrimp)

  • 1/2 honeydew melon, diced or scooped into balls

  • 2 celery sticks, sliced

  • Salt and freshly ground black pepper

  • Shredded lettuce Lemon wedges


Method:

  1. Cook the pasta according to the packet directions. Drain, rinse with cold water and drain again.

  2. Meanwhile, mix the mayonnaise with the crème fraiche and curry paste.

  3. Add the prawns, melon and celery to the pasta and season with salt and pepper. Spoon on to the lettuce in 6 wine goblets.

  4. Spoon the curry sauce over and serve garnished with a lemon wedge on the side of each glass.
