Starters Recipes - Fusilli Fantastico

Ingredients

  • 400 g/14 oz/1 large can pimientos, drained

  • 2 garlic cloves

  • 300 ml/1/2pt/1 1/4 cups olive oil

  • 75 g/3 oz/1/2 cup stuffed olives

  • 50 g/2 oz/1/2 cup grated Parmesan cheese

  • 50 g/2 oz/1/2 cup chopped parsley

  • 30 ml/2 tbsp lemon juice

  • Salt and freshly ground black pepper

  • 350 g/12 oz fusilli

  • A little grated Mozzarella cheese


Method:

  1. Put all the ingredients except the salt and pepper, pasta and Mozzarella in a food processor or blender.

  2. Run the machine until the mixture forms a paste. Stop the machine and scrape down the sides from time to time.

  3. Taste and season with a little salt and lots of black pepper. Cook the fusilli according to the packet directions. Drain and return to the saucepan.

  4. Add the paste and toss over a gentle heat until bathed in the rich sauce. Serve topped with the Mozzarella.
