Starters Recipes - Grilled Aubergine with Peanut Sauce and Wild Rice

Ingredients

  • 100 g/4 oz fl/1/2 cup wild rice

  • 1 large aubergine (eggplant), sliced

  • 45 ml/3 tbsp olive oil

  • Salt and freshly ground black pepper

  • 1 garlic clove, crushed

  • 150 ml/2/3 cup water

  • 75 ml/5 tbsp smooth peanut butter

  • 30 ml/2 tbsp soy sauce

  • Few drops of Tabasco sauce

  • 5 ml/1 tsp grated fresh root ginger

  • 2.5 ml/1/2 tsp cayenne

  • 1 red (bell) pepper, chopped


Method:

  1. Cook the rice according to the packet directions and drain. Meanwhile, place the aubergine slices on a grill (broiler) rack.

  2. Brush with half the oil and season with salt and pepper. Grill (broil) until golden, turn over, brush again with oil and season lightly. Grill until cooked through.

  3. Put all the remaining ingredients except the red pepper in a small pan and heat through, stirring, for 2 minutes.

  4. Arrange the aubergine slices on a bed of rice, top each slice with a little peanut sauce and scatter the red pepper over.
