Starters Recipes - Huevos a la Cubana

Ingredients

  • 175 g/6 oz/3/4 cup long-grain rice

  • 1 onion, finely chopped

  • 1 small garlic clove, crushed

  • 60 ml/4 tbsp olive oil

  • 2 bananas, cut into thick chunks

  • 4 eggs


Method:

  1. Cook the rice in plenty of boiling salted water for 10 minutes or until tender. Drain.

  2. Meanwhile, fry (sauté) the onion and garlic in 15 ml/1 tbsp of the oil until soft and brown. Remove from the pan with a draining spoon and keep warm.

  3. Add a further 15 ml/1 tbsp of the oil to the pan and fry the bananas until just cooked but still holding their shape. Add to the onion.

  4. In a clean frying pan (skillet) heat the remaining oil and fry the eggs until set. Pile the rice on 4 warm plates.

  5. Slide an egg on top of each and garnish with the fried onion and garlic and the bananas.
