Huevos a la Cubana
Ingredients

g/6 oz/3/4 cup long-grain rice

onion, finely chopped

small garlic clove, crushed

ml/4 tbsp olive oil

bananas, cut into thick chunks

eggs
Method:

Cook the rice in
plenty of boiling salted water for 10 minutes or
until tender. Drain.

Meanwhile, fry (sauté) the
onion and garlic in 15 ml/1 tbsp of the oil until
soft and brown. Remove from the pan with a draining spoon and keep warm.

Add a further 15 ml/1 tbsp of the oil to the pan and fry the bananas
until just cooked but still
holding their shape. Add to the onion.

In a clean
frying pan (skillet) heat the remaining oil and fry
the eggs until set. Pile the rice on 4 warm plates.

Slide an egg on top of each and garnish with the
fried onion and garlic and the bananas.
