Huevos Verdi
Ingredients

175 g/6 oz green tagliatelle (verdi)

15 ml/1 tbsp olive oil
-
Salt and freshly
ground black pepper

450 g/1 lb/4 cups
frozen peas
-
25 g/1 oz/2 tbsp
unsalted (sweet) butter
-
30 ml/2 tbsp crème
fraiche
-
15 ml/1 tbsp chopped
mint
-
4 eggs
-
Mint sprigs
Method:
-
Cook the pasta
according to the packet directions. Drain, rinse
with boiling water and drain again.

Add the olive
oil and a little salt and pepper. Toss and divide
between 4 individual warm bowls.

Meanwhile, puree
the peas, butter, crème fraiche, chopped mint and a
little salt and pepper in a blender or food
processor.

Turn into a saucepan and heat through
gently, stirring until piping hot and smooth.
Meanwhile, soft-boil (soft-cook) the eggs for 4
minutes.

Carefully remove the shells under cold
water. Push an egg gently into each pile of pasta
and spoon the sauce over.

Garnish with the mint
sprigs and serve straight away.
