Starters Recipes - Huevos Verdi

Ingredients

  • 175 g/6 oz green tagliatelle (verdi)

  • 15 ml/1 tbsp olive oil

  • Salt and freshly ground black pepper

  • 450 g/1 lb/4 cups frozen peas

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 30 ml/2 tbsp crème fraiche

  • 15 ml/1 tbsp chopped mint

  • 4 eggs

  • Mint sprigs


Method:

  1. Cook the pasta according to the packet directions. Drain, rinse with boiling water and drain again.

  2. Add the olive oil and a little salt and pepper. Toss and divide between 4 individual warm bowls.

  3. Meanwhile, puree the peas, butter, crème fraiche, chopped mint and a little salt and pepper in a blender or food processor.

  4. Turn into a saucepan and heat through gently, stirring until piping hot and smooth. Meanwhile, soft-boil (soft-cook) the eggs for 4 minutes.

  5. Carefully remove the shells under cold water. Push an egg gently into each pile of pasta and spoon the sauce over.

  6. Garnish with the mint sprigs and serve straight away.
