4 beef or turkey
breakfast slices or streaky bacon rashers
(slices), diced
1 onion, finely
chopped
100 g/4 oz/1/2 cup
long-grain rice
Boiling water
425 g/15 oz/1 large can
black-eyed beans, drained
Salt and freshly
ground black pepper
1 jalopeno pepper,
seeded and chopped
Corn chips
Ready-prepared tomato salsa
Method:
Melt the butter in a large frying pan (skillet).
Add the meat and onion and fry (sauté) for 3-4
minutes. Add the rice and cook for 1 minute.
Just
cover with boiling water, bring to the boil, reduce
the heat and simmer for 10-15 minutes until the rice
is tender, topping up with boiling water if
necessary.
Stir in the beans, a
good
seasoning
of salt and pepper and the jalapeño pepper. Toss
gently.
Spoon on to plates and serve with the corn
chips and tomato salsa.
