Japanese-style Dipped Noodles
Ingredients

450 ml/2 cups dashi (Japanese seaweed and fish
stock), or
water and 2 fish stock cubes

45 ml/3 tbsp mirim
(Japanese rice wine), or dry sherry
-
45 ml/3
tbsp soy sauce
-
225 g/8 oz dried bonito (fish) flakes, or anchovy essence
to taste

Japanese soba or somen noodles, or
Chinese egg noodles
Method:

Place all the ingredients except the noodles in a saucepan.

Bring slowly
to the boil. Reduce the heat and simmer gently for
10 minutes.

If using the fish flakes, strain through
a sieve (strainer) lined with muslin (cheesecloth).
Pour into 4 or 6 individual bowls.

Meanwhile, cook
the noodles according to the packet directions (or
cook them in
advance and serve cold). Serve for dipping in the
bowls of sauce.
