Recipes - Linguini with Hot Chili Oil
Ingredients

350g/12 oz linguini
-
375 ml/13 fl oz/1 1/2
cups olive oil
-
6 garlic cloves, chopped
-
2 thin green chilies,
seeded and chopped
-
1 red jalopeno pepper,
seeded and chopped
-
Freshly ground
black pepper
-
Grated Parmesan cheese
Method:
-
Cook the linguini
according to the packet directions. Drain and return
to the pan.
-
Heat the oil in a frying pan (skillet).
Add the garlic and the green and red chilies and
fry (sauté) for 2 minutes.
-
Pour immediately
over the pasta, add a
good
grinding
of black pepper and toss well.
-
Serve straight away
with the Parmesan cheese and lots of crusty bread.
