Starters Recipes - Linguini with Hot Chili Oil

Ingredients                        

  • 350g/12 oz linguini

  • 375 ml/13 fl oz/1 1/2 cups olive oil

  • 6 garlic cloves, chopped

  • 2 thin green chilies, seeded and chopped

  • 1 red jalopeno pepper, seeded and chopped

  • Freshly ground black pepper

  • Grated Parmesan cheese


Method:

  1. Cook the linguini according to the packet directions. Drain and return to the pan.

  2. Heat the oil in a frying pan (skillet). Add the garlic and the green and red chilies and fry (sauté) for 2 minutes.

  3. Pour immediately over the pasta, add a good grinding of black pepper and toss well.

  4. Serve straight away with the Parmesan cheese and lots of crusty bread.
