Starters Recipes - Rice in Black Butter
Ingredients
350 g/12 oz/1 1/2 cups arborio or other risotto rice
40 g/1 1/2 oz/3 tbsp unsalted (sweet) butter
30 ml/2 tbsp grated Parmesan cheese
Salt and freshly ground black pepper
Method:
Cook the rice in plenty of boiling salted water for about 18 minutes until just tender. Drain well.
Melt the butter in a heavy pan until turning golden (do not let it bum). Add the rice and toss well until coated.
Stir in the cheese and season well to taste. Serve hot.
