Starters Recipes - Strawberry and Melon Cooler

Ingredients

  • 100 g/4 oz/1 cup red conchiglie (alpomodoro)

  • 1 small ripe honeydew melon

  • 100 g/4 oz strawberries, sliced

  • 5 cm/2 in piece cucumber, diced

  • Grated rind and juice of 1 lime

  • A little caster (superfine) sugar (optional)

  • 15 ml/1 tbsp sunflower oil

  • Freshly ground black pepper

  • 15 ml/1 tbsp chopped mint

  • Mint sprigs


Method:

  1. Cook the pasta according to the packet directions. Drain, rinse with cold water and drain again.

  2. Mix with all the remaining ingredients except the mint sprigs. Toss gently and chill for 2 hours to allow the flavors to develop.

  3. Spoon into large wine goblets and garnish each with a sprig of mint.
