Starters Recipes - Strawberry and Melon Cooler
Ingredients
100 g/4 oz/1 cup red conchiglie (alpomodoro)
1 small ripe honeydew melon
100 g/4 oz strawberries, sliced
5 cm/2 in piece cucumber, diced
Grated rind and juice of 1 lime
A little caster (superfine) sugar (optional)
15 ml/1 tbsp sunflower oil
Freshly ground black pepper
15 ml/1 tbsp chopped mint
Mint sprigs
Method:
Cook the pasta according to the packet directions. Drain, rinse with cold water and drain again.
Mix with all the remaining ingredients except the mint sprigs. Toss gently and chill for 2 hours to allow the flavors to develop.
Spoon into large wine goblets and garnish each with a sprig of mint.
