Tapenade-Dressed Linguini
Ingredients

250 ml/8fl oz/1 cup
olive oil
-
225 g/8 oz/1 1/3 cups
stoned (pitted) black olives
-
225 g/8 oz/1/3 cups
stoned (pitted) green olives
-
3 garlic
cloves
-
2
x 50 g/2 x
2 oz/2 small cans anchovies, drained

75g/3 oz/3/4 cup chopped
parsley
-
45 ml/3
tbsp lemon juice
-
Freshly ground black
pepper
-
350 g/12 oz linguini
-
Thin slivers of fresh
Parmesan cheese
Method:
-
Put all the
ingredients except the linguini and Parmesan in a
food processor or blender.
-
Run the machine until a
smooth paste is formed. Stop the machine and scrape
down the sides from time to time.

Cook the pasta
according to the packet
directions. Drain and return to the saucepan.

Add
the tapenade. Toss well over a gentle heat and serve
garnished with thin slivers of Parmesan cheese.
