Starters Recipes - Tortellini in Black Butter

Ingredients

  • 250 g/9 oz/1 packet tortellini with 3 cheeses

  • 175 g/6 oz/3/4 cup unsalted (sweet) butter

  • 3 garlic cloves, halved

  • 175 g/6 oz/1 1/2 cups grated Parmesan cheese

  • Salt and freshly ground black pepper

  • Chopped parsley


Method:

  1. Cook the pasta according to the packet directions, drain and return to the saucepan.

  2. Meanwhile, melt the butter in a frying pan (skillet). Add the garlic and fry (sauté) until the garlic is golden and the butter nut-brown.

  3. Remove and discard the garlic. Pour the butter over the pasta with half the cheese, a little salt and pepper and half the parsley.

  4. Toss well over a gentle heat then serve immediately, garnished with the remaining parsley and the rest of the cheese handed separately.
