100 g/4 oz/2 cups cooked whole
wheat zite or other pasta shapes
Salt and freshly ground black
pepper
Lime twists
Method:
Cut channels down the length of
the cucumber all round with a cannelling tool
or a small sharp knife.
Cut into 6 equal lengths. Scoop out and discard the
seeds and place the cucumber on a bed of lettuce
leaves on individual plates.
Finely chop half the pepper and mix with the tuna,
lime rind and juice, mayonnaise and pasta.
Toss lightly but thoroughly, adding salt and pepper
to taste. Pile into the cucumber pieces and garnish
with the reserved pepper rings and lime twists.
