Fry (sauté) the onion in the oil until soft but not
brown. Stir in the rice and the pepper and cook for
2 minutes.
Stir in the boiling water and a little
salt. Bring to the boil again, reduce the heat,
cover and simmer gently for about 15 minutes until
the rice is tender and has absorbed the liquid.
Fluff up with a fork and serve hot with chicken or
meat dishes.
