Ingredients

75 g/3 oz/3/4 cup
spaghetti, broken into short lengths

225 g/8 oz short crust
pastry (basic pie crust)

400 g/14 oz/1 large
can artichoke hearts, drained and
quartered
-
100 g/4 oz Mozzarella
cheese, grated

400 g/14 oz/1 large can
chopped tomatoes, drained
-
40 g/1/3 cup
grated Parmesan cheese
-
1 garlic clove, finely
chopped
-
15 g/1 tbsp chopped
parsley
-
15 ml/1 tbsp olive oil
Method:

Cook
the spaghetti according to the packet
directions, drain, rinse with cold water and drain
again.

Meanwhile, roll out the pastry and use to
line a 23 cm/9 in flan dish (pie pan).

Prick the
base with a fork, then add the cooked spaghetti and
spread evenly. Cover with the artichoke hearts then
a layer of Mozzarella.

Top with the tomatoes, then
the Parmesan cheese. Finally, mix the garlic and
parsley together, sprinkle over and drizzle with
olive oil.

Place on a baking sheet and bake in the
oven at 220°C/425°F/gas mark 7 for 25 minutes until
golden and cooked through.
