Vegetables Recipes - Artichoke Pasta Pie

Ingredients                         

  • 75 g/3 oz/3/4 cup spaghetti, broken into short lengths

  • 225 g/8 oz short crust pastry (basic pie crust)

  • 400 g/14 oz/1 large can artichoke hearts, drained and quartered

  • 100 g/4 oz Mozzarella cheese, grated

  • 400 g/14 oz/1 large can chopped tomatoes, drained

  • 40 g/1/3 cup grated Parmesan cheese

  • 1 garlic clove, finely chopped

  • 15 g/1 tbsp chopped parsley

  • 15 ml/1 tbsp olive oil


Method:

  1. Cook the spaghetti according to the packet directions, drain, rinse with cold water and drain again.

  2. Meanwhile, roll out the pastry and use to line a 23 cm/9 in flan dish (pie pan).

  3. Prick the base with a fork, then add the cooked spaghetti and spread evenly. Cover with the artichoke hearts then a layer of Mozzarella.

  4. Top with the tomatoes, then the Parmesan cheese. Finally, mix the garlic and parsley together, sprinkle over and drizzle with olive oil.

  5. Place on a baking sheet and bake in the oven at 220°C/425°F/gas mark 7 for 25 minutes until golden and cooked through.
