Vegetables Recipes - Asian Rice with Peas

Ingredients

  • 75 ml/5 tbsp corn oil

  • 2 small onions, finely sliced

  • 2 whole cloves

  • 5 ml/1 tsp cumin seeds

  • 2.5 cm/1 in piece cinnamon stick

  • 900 ml/3 3/4 cups water

  • 100 g/4 oz/1 cup frozen peas

  • 5 ml/1 tsp salt

  • 450 g/1lb/2 cups basmati rice, soaked and drained


Method:

  1. Heat the oil in a large pan. Add the onions and fry quickly for about 4 minutes until browned.

  2. Add the remaining ingredients except the rice and bring to the boil.

  3. Stir in the rice, bring to the boil again, reduce the heat and simmer gently for about 15-20 minutes until the rice is tender and all the water has been absorbed.

  4. Cover tightly, turn off the heat and leave to stand for 5 minutes until the rice is fluffy. Fork through and serve at once.
