Vegetables Recipes - Californian Rice for Chicken

Ingredients

  • 1 onion, finely chopped

  • 25 g/1 oz/2 tbsp butter

  • 175 g/6oz/3/4 cup long-grain rice

  • 40 g/1/4 cup stoned (pitted) raisins (not seedless ones)

  • 450 ml/2 cups chicken stock

  • Salt and freshly ground black pepper

  • 50 g/2 oz/1/2 cup roasted, unsalted peanuts

  • Chopped coriander (cilantro)


Method:

  1. Fry (sauté) the onion in the butter in a large frying pan (skillet) for 2 minutes until soft but not brown.

  2. Stir in the rice, raisins, stock and a little salt and pepper.

  3. Bring to the boil, reduce the heat, cover and simmer gently for 15-20 minutes until the rice is tender and has absorbed all the liquid.

  4. Stir in the peanuts and fluff up with a fork. Sprinkle with coriander and serve hot straight from the pan with roast or grilled chicken.
