Californian Rice for Chicken
Ingredients

onion, finely chopped

g/1 oz/2 tbsp butter

g/6oz/3/4 cup long-grain rice

40 g/1/4 cup
stoned (pitted)
raisins (not seedless ones)

450 ml/2 cups chicken
stock
-
Salt and freshly ground black pepper

g/2 oz/1/2 cup roasted, unsalted peanuts

Chopped coriander (cilantro)
Method:
-
Fry (sauté) the onion
in the butter in a large frying pan (skillet) for 2
minutes until soft but not brown.

Stir in the rice,
raisins, stock and a little salt and pepper.
-
Bring
to the boil, reduce the heat, cover and simmer
gently for 15-20 minutes until the rice is tender
and has absorbed all the liquid.

Stir in the peanuts
and fluff up with a fork. Sprinkle with coriander
and serve hot straight from the pan with roast or
grilled chicken.
