Vegetables Recipes - Cheese and Tomato Cannelloni

Ingredients                     

  • 2 x 400 g/2 x 14 oz/2 large cans chopped tomatoes

  • 75 g/3 oz/1 1/2 cups fresh breadcrumbs

  • 100 g/4 oz Cheddar cheese, grated

  • 15 ml/1 tbsp chopped basil

  • Salt and freshly ground black pepper

  • 8 tubes no-need-to-precook cannelloni

  • 2.5 ml/1/2 tsp dried mixed herbs


Method:

  1. Drain one of the cans of tomatoes and mix with the breadcrumbs, half the cheese, the basil and a little salt and pepper.

  2. Spoon into the cannelloni tubes. Lay in a lightly greased ovenproof dish.

  3. Spoon the other can of tomatoes over, sprinkle with the mixed herbs, then the remaining grated cheese.

  4. Bake in the oven at 190°C/375°F/gas mark 5 for 35 minutes until the cannelloni is cooked through and the top is golden.
