Vegetables Recipes - Curried Fried Rice with Leeks

Ingredients

  • 225 g/8 oz/1 cup brown basmati rice

  • Salt

  • 1 kg/2 1/4 lb leeks, sliced

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 5 ml/1 tsp curry powder

  • Freshly ground black pepper

  • 25 g/1 oz/1/4 cup toasted flaked almonds


Method:

  1. Cook the rice in plenty of boiling salted water for about 25 minutes or until tender.

  2. Drain, rinse with boiling water and drain again. Cook the leeks in boiling, lightly salted water for 5 minutes, drain.

  3. Melt the butter in a large frying pan (skillet) and fry (sauté) the leeks for 8-10 minutes until cooked and lightly golden.

  4. Add the cooked rice and toss over a gentle heat. Sprinkle over the curry powder and lots of black pepper.

  5. Toss over the heat for 4 minutes until well blended and piping hot. Serve sprinkled with the almonds.
