Recipes - Curried Spring Onion Rice
Ingredients

25 g/1 oz/2 tbsp
butter
-
1 bunch of spring
onions (scallions), chopped
-
1 small onion, chopped
-
10 ml/2 tsp curry
powder
-
5 ml/1 tsp paprika
-
225 g/8 oz/1 cup
basmati rice
-
450 ml/2 cups
vegetable stock
-
Salt and freshly ground black pepper
Method:

Melt the butter in a flameproof casserole (Dutch
oven). Add the spring onions and onion.
-
Fry (sauté)
for 4 minutes, stirring until lightly golden.
Add
the remaining ingredients.

Bring to the boil, cover
tightly, reduce the heat and cook gently, stirring
occasionally for 25-30 minutes. Fluff up with a fork
and serve.
