Vegetables Recipes - Curried Spring Onion Rice

Ingredients

  • 25 g/1 oz/2 tbsp butter

  • 1 bunch of spring onions (scallions), chopped

  • 1 small onion, chopped

  • 10 ml/2 tsp curry powder

  • 5 ml/1 tsp paprika

  • 225 g/8 oz/1 cup basmati rice

  • 450 ml/2 cups vegetable stock

  • Salt and freshly ground black pepper


Method:

  1. Melt the butter in a flameproof casserole (Dutch oven). Add the spring onions and onion.

  2. Fry (sauté) for 4 minutes, stirring until lightly golden. Add the remaining ingredients.

  3. Bring to the boil, cover tightly, reduce the heat and cook gently, stirring occasionally for 25-30 minutes. Fluff up with a fork and serve.
