Vegetables Recipes - Cypriot Rice Pilaff with Spinach

Ingredients

  • 450 g/1 lb spinach, well washed

  • 750 ml/3 cups water

  • 30 ml/2 tbsp corn oil

  • 1 onion, finely chopped

  • Salt

  • 225 g/8 oz/1 cup long-grain rice

  • Plain yoghurt


Method:

  1. Put the spinach in a pan with the water, oil, onion and a little salt.

  2. Cook gently until the spinach is tender, about 10 minutes. Strain, reserving the liquid and finely chop the spinach.

  3. Make the liquid up to 450 m/2 cups with water. Bring to the boil and add the rice.

  4. Simmer gently until the liquid is absorbed and the rice is tender.

  5. Stir in the spinach, then remove from the heat, cover with a cloth and leave to stand for 5 minutes. Serve with yoghurt spooned over.
