Vegetables Recipes - Exotic Mushroom Medley

Ingredients

  • 225 g/8 oz spaghetti

  • 45 ml/3 tbsp olive oil

  • 2 garlic cloves, finely chopped

  • 225 g/8 oz oyster mushrooms, stemmed and coarsely chopped

  • 100 g/4 oz shiitake mushrooms, stemmed and coarsely chopped

  • 100 g/4 oz chanterelles, stemmed and coarsely chopped

  • Salt

  • 5 ml/1 tsp coarsely crushed green peppercorns

  • 60 ml/4 tbsp chicken stock

  • 60 ml/4 tbsp dry Aqua Libra (or similar herbal drink)

  • Freshly grated Parmesan cheese


Method:

  1. Cook the pasta according to the packet directions. Drain and return to the pan.

  2. Meanwhile, heat the oil in a large frying pan (skillet). Add the garlic, all the mushrooms, a little salt and the peppercorns.

  3. Cook, stirring, for 2 minutes. Add the stock and simmer for a further 1 minute. Add the Aqua Libra and simmer until reduced by half.

  4. Add to the pasta and toss well over a gentle heat until all the liquid is absorbed. Serve sprinkled with Parmesan.
