Vegetables Recipes - French Peas with Rice

Ingredients                                         

  • 175 g/6 oz/3/4 cup long-grain rice

  • 50 g/2 oz/1/4 cup butter

  • 1 bunch of spring onions (scallions), chopped

  • 1 little gem lettuce, shredded

  • 5 ml/1 tsp caster (superfine) sugar

  • 450 g/1 lb/4 cups frozen minted garden peas

  • Salt and freshly ground black pepper


Method:

  1. Cook the rice in plenty of boiling salted water until tender. Drain, rinse with boiling water and drain again.

  2. Meanwhile, melt the butter in a pan. Add the spring onions and fry (sauté) for 2 minutes.

  3. Add the remaining ingredients and simmer gently for 10 minutes. Stir into the rice and serve hot.
