French Peas with Rice
Ingredients

g/6 oz/3/4 cup long-grain rice

50 g/2 oz/1/4 cup butter

1
bunch of spring onions (scallions), chopped

1
little gem lettuce, shredded
-
5
ml/1 tsp caster (superfine) sugar

450 g/1 lb/4 cups
frozen minted garden peas

Salt
and freshly ground black pepper
Method:

Cook the
rice in plenty of boiling salted water until
tender. Drain, rinse with boiling water and
drain again.

Meanwhile, melt the butter in a
pan. Add the spring onions and fry (sauté) for 2
minutes.

Add the remaining ingredients and
simmer gently for 10 minutes. Stir into the rice
and serve
hot.
