Vegetables Recipes - Glorious Creamy Green Pasta

Ingredients

  • 350 g/12 oz green tagliarini (verdi)

  • 225 g/8 oz/2 cups frozen peas

  • 60 ml/4 tbsp olive oil

  • 1 bunch of watercress, chopped

  • 30 ml/2 tbsp chopped basil

  • 120 ml/4 fl oz/1/2 cup creme fraiche

  • Salt and freshly ground black pepper

  • Grated nutmeg


Method:

  1. Cook the pasta according to the packet directions. Drain and return to the pan.

  2. Meanwhile, gently stew the peas in the olive oil in a covered saucepan for 4 minutes, stirring occasionally. Don't have the heat too high or you will fry (sauté) rather than stew them.

  3. Add the remaining ingredients with seasoning to taste, stir well and simmer for a further 2-3 minutes.

  4. Add to the tagliarini, toss well and serve hot.
