Vegetables Recipes - Green Sweet Spiced Rice

Ingredients

  • 350 g/12 oz arborio or other risotto rice

  • 450 g/1lb spinach

  • 30 ml/2 tbsp olive oil

  • 40 g/3 tbsp unsalted (sweet) butter

  • 1 large garlic clove

  • Salt and freshly ground black pepper

  • 1.5 ml/1/4 tsp ground nutmeg

  • 1.5 ml/1/4 tsp ground mace

  • 45 ml/3 tbsp freshly grated Parmesan cheese


Method:

  1. Cook the rice in plenty of boiling salted water for 18 minutes until just tender. Drain thoroughly and return to the saucepan.

  2. Meanwhile, wash the spinach in several changes of cold water. Chop and cook in a saucepan with no extra water for 3 minutes. Drain.

  3. Heat the oil and half the butter in a large pan. Add the garlic and lightly cooked spinach and fry (sauté), stirring for 4 minutes.

  4. Remove and discard the garlic. Stir the remaining butter into the hot rice and add the spinach, a little salt and pepper and the spices.

  5. Toss gently and serve sprinkled with the Parmesan.
