Vegetables Recipes - Indian Spiced Rice

Ingredients

  • 450g/2 cups basmati rice

  • 900ml/4 cups chicken or vegetable stock

  • 60ml/4 tbsp sunflower oil

  • 2 cardamom pods, lightly crushed

  • 2.5cm/1 in piece cinnamon stick

  • 5 whole cloves

  • 5ml/1 tsp black peppercorns

  • 5ml/1 tsp cumin seeds

  • 5ml/1 tsp black mustard seeds

  • 5ml/1 tsp salt


Method:

  1. Wash the rice then leave it to soak for 30 minutes in the stock.

  2. Heat the oil in a non-stick saucepan. Add the spices and fry for 1 minute until the mustard seed begin to pop.

  3. Add the rice and stock and season with salt. Bring to the boil, reduce the heat to as low as possible.

  4. Cover tightly with a lid (or foil and a lid if it is not tight fitting) and cook for 25 minutes without uncovering.

  5. Remove the lid, fluff up with a fork and serve straight away.
