Vegetables Recipes - Italian New Years's Eve Rice

Ingredients

  • 120 ml/1/2 cup olive oil

  • 1 small onion, finely chopped

  • 350 g/12 oz/2 cups split lentils, soaked

  • 750 ml/3 cups water

  • Salt and freshly ground black pepper

  • 350 g/12 oz/1 1/2 cups arborio or other risotto rice


Method:

  1. Heat 60 ml/4 tbsp of the oil in a large pan. Fry (sauté) the onion gently for 2 minutes, stirring until softened but not browned.

  2. Drain the lentils and add with the water. Season with salt and pepper.

  3. Bring to the boil, reduce the heat, cover and simmer gently until the lentils are tender, adding more water if necessary.

  4. Meanwhile, cook the rice in plenty of boiling salted water for 18 minutes until just tender. Drain thoroughly.

  5. Pile the rice and lentils in two separate mounds on small serving plates. Drizzle the remaining olive oil over and serve very hot.
