Vegetables Recipes - Mediterranean Courgettes

Ingredients

  • 90 ml/6 tbsp olive oil

  • 1 onion, chopped

  • 1 garlic clove, crushed

  • 6 courgettes (zucchini), sliced

  • 4 ripe tomatoes, skinned, seeded and chopped

  • 15 ml/1 tbsp tomato puree (paste)

  • 5 ml/1 tsp caster (superfine) sugar

  • Salt and freshly ground black pepper

  • 12 black olives, halved

  • 350 g/12 oz linguini

  • Grated Parmesan cheese


Method:

  1. Heat two-thirds of the oil in a large saucepan. Add the onion and fry (sauté) for 3 minutes until softened but not browned.

  2. Add the garlic, the courgettes and tomatoes and cook, stirring for 3 minutes until the courgettes are slightly softened.

  3. Add the tomato puree, sugar, a little salt and pepper and half the olives. Cover and simmer gently for 15 minutes.

  4. Meanwhile, cook the linguini according to the packet directions. Drain and pile on a serving dish.

  5. Spoon the courgette mixture over. Drizzle with the remaining olive oil and scatter the remaining olives over. Serve with grated Parmesan cheese.
