Mediterranean Courgettes
Ingredients

90 ml/6 tbsp olive
oil

onion, chopped

garlic clove, crushed

courgettes (zucchini), sliced

ripe tomatoes, skinned, seeded and chopped

ml/1 tbsp tomato
puree (paste)

5 ml/1 tsp caster (superfine)
sugar

Salt and freshly ground black
pepper

black olives, halved

g/12 oz linguini

Grated Parmesan cheese
Method:
-
Heat two-thirds of the
oil in a large saucepan. Add the onion and fry (sauté)
for 3 minutes until softened but not browned.

Add
the garlic, the courgettes and tomatoes and cook,
stirring for 3 minutes until the courgettes are
slightly softened.

Add the tomato puree, sugar, a
little salt and pepper and half the olives. Cover
and simmer gently for 15 minutes.

Meanwhile, cook
the linguini according to the packet directions.
Drain and pile on a serving dish.

Spoon the courgette mixture over. Drizzle with the remaining
olive oil and scatter the remaining olives over.
Serve with grated Parmesan cheese.
