Vegetables Recipes - Mexican White Rice with Onion

Ingredients

  • 45 ml/3 tbsp corn oil

  • 2 large onions, sliced

  • 2 garlic cloves, crushed

  • 350 g/12 oz/1 1/2 cups long-grain rice

  • 750 ml/3 cups chicken stock

  • 1 green chili, seeded and chopped

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp chopped parsley


Method:

  1. Heat the oil in a pan. Add the onions and garlic and fry (sauté) for 4 minutes until lightly golden, stirring all the time.

  2. Add the rice and fry for a further 1 minute. Stir in the stock with the chili and seasoning to taste.

  3. Bring to the boil, reduce the heat, cover and simmer gently for 20 minutes. Turn off the heat and leave undisturbed for 5 minutes.

  4. Remove the lid, fluff up with a fork and serve hot garnished with the parsley.
