Recipes - Mixed Pulse Supper
Ingredients

225 g/8 oz/1 cup brown
rice
-
1 garlic clove,
crushed
-
1 onion, finely
chopped
-
30 ml/2 tbsp olive oil
-
230 g/1 large
can mixed pulses, drained
-
2.5 ml/1/2 tsp dried
oregano
-
100 g/4 oz Cheddar
cheese, grated

2 tomatoes, sliced
Method:

Cook the rice according to the packet directions. Drain.

Meanwhile, fry (sauté) the garlic and onion in the
oil for 4 minutes until a rich golden brown,
stirring.

Stir in the pulses, oregano and rice and
heat through, stirring.
-
Pile into a flameproof dish,
top with the cheese and garnish with the sliced
tomatoes.
-
Grill (broil) until the top is golden and
bubbling. Serve hot.
