Vegetables Recipes - Mixed Pulse Supper

Ingredients

  • 225 g/8 oz/1 cup brown rice

  • 1 garlic clove, crushed

  • 1 onion, finely chopped

  • 30 ml/2 tbsp olive oil

  • 230 g/1 large can mixed pulses, drained

  • 2.5 ml/1/2 tsp dried oregano

  • 100 g/4 oz Cheddar cheese, grated

  • 2 tomatoes, sliced


Method:

  1. Cook the rice according to the packet directions. Drain.

  2. Meanwhile, fry (sauté) the garlic and onion in the oil for 4 minutes until a rich golden brown, stirring.

  3. Stir in the pulses, oregano and rice and heat through, stirring.

  4. Pile into a flameproof dish, top with the cheese and garnish with the sliced tomatoes.

  5. Grill (broil) until the top is golden and bubbling. Serve hot.
