Ingredients

225g/8 oz/2 cups rigationi

300ml/1 1/4 cups passata (sieved tomatoes)

198g/1 small can sweet corn (corn)

2.5ml/1/2 tsp dried oregano
-
225g/8 oz frozen chopped spinach
-
25g/1/4 cups plain (all-purpose) flour
-
300ml/1 1/4 cup milk
-
25g/2 tbsp butter
-
100g/4 oz Cheddar cheese, grated

salt and freshly ground black pepper
Method:

Cook the pasta in
plenty of boiling salted water, according to the
packet directions, drain and return to the pan.

Stir in the
passata, sweet corn and oregano and heat through.
Meanwhile, cook the spinach according to the packet
directions. Drain.

Whisk the flour
with the milk in a saucepan. Add the butter and
bring to the boil, whisking all the time.

Stir in the
cheese and season to taste. Put half the pasta in a
1.5 liter/6 cups ovenproof dish.

Top with the
spinach then the rest of the pasta. Pour the sauce
over.

Sprinkle with the
remaining cheese and grill (broil) for about 5
minutes until bubbling and golden brown.
